Gingerbread Cookies

Gingerbread is such a quintessential scent and taste for Christmas and I’ve been associating the cookies with this season for as long as I can remember. It seems people fall into two categories: you either love them or hate them. I think they are just divine. Strangely enough, as much as I love baking, I’ve never given this particular dessert a try. It took two attempts to get the consistency just right {classic crunch with just a slight amount of soft chew in the middle}. Thankfully, the second batch was the one being sent off as gifts. I definitely need a little more practice with the frosting, but I think this may become my own tradition year after year.


And it’s not just over yet. I have a gingerbread house {complements of my parents – thanks!} to assemble and decorate next week.
